Homemade Beignets

BOY have I been craving some beignets lately! So... I decided to do something about it! I have now had not one, but two batches of homemade beignets in the past couple weeks! Don't get me wrong they're not Cafe du Monde, but seeing as NOLA is 6 hrs away... it does the job!

Ingredients

- 3/4 c. cold water

- 1/2 c. heavy cream

- 1/4 c. sugar

- 2 tbsp. room temp. unsalted butter

- 1 egg [beaten]

- 2 1/4 tsp. quick rise yeast

- 3 3/4 c. flour

- 1/2 salt

- Oil [for deep frying]

- Powdered Sugar [for topping]

 

Instructions

1. In an electric mixer fitted with the paddle attachment, mix water, heavy cream, butter, egg, sugar and yeast.

2. To your wet ingredients mixture, slowly add in 3 of your 3 3/4 cups flour.

3. Add as much of your remaining flour as needed to create a dough that does not stick to your bowl.

4. Remove the paddle attachment and fit the mixer with a dough hook attachment.

5. Knead dough on dough hook for 7 minutes until dough is smooth then shape into a ball.

6. Butter a large bowl then add the dough to the bowl [rolling it around slightly to coat in butter] Cover bowl in plastic wrap and let rise 1.5-2 hrs.

7. On a generously floured surface, roll dough into 1/4 in. thick rectangle.

8. Cut your dough rectangle into roughly 2 in. wide rectangles.

9. Let your rectangles rise while your oil heats up.

10. Heat up about 2-3 inches of oil to 350 F.

11. Once your oil is ready -carefully- place your beignet dough into the oil and watch as it puffs. Flip often as they brown quickly. We're looking for that lovely golden brown color a beignet typically is!

12. Transfer to a pan lined with paper towels to catch the excess oil.

13. Finally - generously - top your beignets with some powdered sugar & enjoy!
